Sweet filled pancakes
Hotteok (호떡) is the sweet street snack of Korean winters: a soft dough filled with brown sugar, cinnamon and nuts, pan-fried until the sugar melts into syrup.
Ingredients

- All-purpose flour2 cups (260 g)
- Lukewarm water1 cup (240 ml)
- Dry yeast2 tsp (7 g)
- Sugar1 tbsp
- Salt1/2 tsp
- Vegetable oil1 tbsp for the dough, plus more for frying
- Brown sugar1/2 cup (100 g)
At your store: Grated piloncillo in Mexico, or açúcar mascavo in Brazil.
- Ground cinnamon1 tsp
- Chopped walnuts3 tbsp
At your store: Pecans or chopped peanuts.
Steps
- Step 1:
In a bowl, mix the lukewarm water, sugar, yeast, salt and 1 tbsp oil.
- Step 2:
Add the flour and stir with a spoon into a sticky dough. Do not add more flour, that is what keeps it soft.
- Step 3:
Cover and let rise in a warm spot for 1 hour, until doubled. Punch it down and let it rest 15 more minutes.
- Step 4:
Mix the brown sugar, cinnamon and nuts.
- Step 5:
Oil your hands, take one eighth of the dough, flatten it in your palm, add 1 heaping tbsp of filling and pinch the edges closed.
- Step 6:
Place the ball seam side down in an oiled pan over medium heat. When golden, after about 1 minute, flip it and press it flat with a spatula to about 10 cm.
- Step 7:
Lower the heat, cover and cook for 1 to 2 minutes until the filling melts. Flip once more to brown the other side.
- Step 8:
Wait 1 minute before biting in, because the syrup inside is very hot.
Busan is famous for ssiat hotteok (씨앗호떡), which is fried, then split open and stuffed with seeds. Try adding pumpkin and sunflower seeds to the filling.
